PRAWN PAKODA

Preparation Time : 15 minutes
Cooking Time : 15 minutes
Total Time : 30 minutes
Spicy prawn pakora are prawn fritters that go perfectly as a non-veg starter or as a tea time snack.

INGREDIENTS :
·         2 tablespoons besan / chick pea flour
·         2 tablespoon corn flour or chick pea flour or rice flour
·         1 small onion sliced thinly.
·         1large sprig of fresh curry leaves torn or mint leaves.
·         1 large chilli chopped
·         1 teaspoon ginger garlic paste or crushed ginger garlic.
·         1/4 teaspoon garam masala powder.
·         Salt as needed for the batter
·         oil for deep frying.


Marination:
·         10 prawns
·         1/4 teaspoon Red chili powder
·         1/8 teaspoon turmeric powder
·         salt as needed.
·         1 tablespoon fresh lemon juice or vinegar.

HOW TO MAKE THE RECIPE :
1.    Devein prawns and remove the tails. Wash and drain them.
2.    Marinate prawns with ingredients mentioned under marination and set aside for atleast 15 minutes.
3.    Heat oil in a kadai foe deep frying.
4.    Add the rest of the ingredients oil to the already marinated prawns. Mix gently to coat the prawns well with fdry flours, if needed sprinkle 1 teaspoon water and mix. The mix must be just moist enough.
5.    Once the oil is hot, put the flame to medium high, hold each prawn along with some onions, curry leaves batter and drop in the oil.
6.    Take care not to burn them, flip them to the other side and fry till golden. Drain them on a absorbent tissue.make batches and fry all the prawns until you finish.
7.    Once you finish frying all the pakora, repeat frying them for a minute, this gives a good crunchy texture to the fritters.

HYDERABAD APOLLO FISH FRY



Preparation Time : 30 minutes

Total Time : 50 minutes
Yield / Serves : 3
INGREDIENTS :  (240 ml cup used)
  • 500 grams boneless fish fillet ( cut to small pieces or strips).
  • Oil for deep frying.
  • 2 tablespoon corn flour.
  • 1 tablespoon plain flour.
Seasoning :
  • 1 tablespoon oil for seasoning.
  • 1 sprig curry leaves.
  • 1 1/2 tablespoon chopped ginger.
  • 1 1/2 tablespoon chopped garlic.
  • 2 green chilies.
  • 2 onions chopped.
 
Marination :
  • 1 teaspoon red chili powder.
  • 1 teaspoon ginger garlic paste.
  • 1/4 teaspoon turmeric.
  • Salt to taste.
  • 1 medium sized lemon (extract the juice).
  • 1 egg white.
HOW TO MAKE THE RECIPE :
  1. Cut the fish to desired size pieces or to strips and wash and drain.
  2. Pour the lemon juice and salt over the fish and set aside for 5 minutes.
  3. Marinate with ingredients mentioned under marination. Set aside for about 30 minutes to 2 hours. If more than 30 minutes refrigirate.
  4. Heat oil for deep frying.
  5. Sprinkle corn and plain flours and mix well.
  6. When the oil is hot enough, reduce the heat to medium, deep fry the pieces until done. Set aside on an absorbent tissue.
  7. Heat 1 tablespoon oil in another pan, fry curry leaves till crisp, add ginger garlic and green chilies and fry till you get an aroma.
  8. Add chopped onions and fry till lightly brown.
  9. Add the fried fish and saute on high for 3 minutes.

GRILLED FISH RECIPE'S

Healthy, easy and tasty grilled fish made in Indian Style.
Yield : 2

Preparation Time : 1hour
Cooking Time : 40 minutes
Total Time : 1 hour 40 minutes

INGREDIENTS:
u  300 grams fish fillet (any variety)
u  1/4 cup of chopped onions
u  1 teaspoon ginger garlic paste
u  1 teaspoon red chilli powder or paprika
u  1/8 teaspoon turmeric powder
u  1/8 teaspoon garlic powder
u  3/4 teaspoon garam masala (any spice powder as desired)
u  1 to 1/2 tablespoon lemon juice ( can substitute vinegar,adjust as per your need)
u  Salt to taste
u  1 teaspoon of semolina or 3/4 tablespoon corn flour (optional, gives a light crust to your fish)
u  1 teaspoon oil to grease your baking tray or foil.

HOW TO MAKE THE RECIPE :
1.    Wash the fillet under runnding water and pat dry with kitchen tissues. Make slits on the fillet and set aside.
2.    Make a paste of all the ingredients except semolina and marinate the fillet on both sides well to cover the slits too. Set this aside for atleast for 1 hour, overnight works best.
3.    Preheat the oven at 160 C. Remove the masala on the skin and place that aside on the tray.
4.    Sprinkle the semolina evenly on the evenly on the fillet. Bake for 30 minutes to 40 minutes. After 20 minutes, run a wooden spoon in the slits and slightly widen the slits for even and thorough grilling.
5.    Serve hot as an appetizer with onion wedges and a vegetable salad.

Notes:

CHILLI FISH / FISH MANCHURIAN

Fish Manchurian, an indian chinese fish recipe that is served in the restaurants. Can be prepared with shallow fried and oven baked fish too.

Preparation Time : 15 minutes
Cooking Time : 25 minutes
Total Time : 40 minutes
Yield / Serves : 2 to 3

INGREDIENTS : (240 ml cup used)
u  Oil for shallow frying or deep frying
u  250 grams fish fillet
u  1 1/2 tablespoons corn flour
u  1 1/2 tablespoons plain flour

Sauce Ingredients :
u  3 garlic cloves minced.
u  2 tablespoon green part of spring onions ( you can also use onions if you do not have spring onions, if you use onions seperate the layers).
u  2 tablespoon white part of spring onion.
u  1/4 each of green and red bell pepper cubes.
u  3/4 teaspoon cornflour (optional).
u  1 teaspoon soya sauce ( you can reduce little).
u  1 teaspoon vinegar.
u  2 teaspoon red chilli sauce.
u  1/2 teaspoon sugar (optional, you can skip if you do not like sweet taste, but that's how the manchurian dishes taste).



Marination Ingredients :

u  Salt very little.
u  3/4 teaspoon Soya sauce.
u  1/8 teaspoon pepper powder.
u  1.5 teaspoon ginger garlic paste (optional).

HOW TO MAKE THE RECIPE :

1.    Wash the fish and cut to cube sized pieces.
2.    Add Soya sauce, ginger garlic paste, and pepper powder. Mix and marinate. Set aside for at least 30 minutes.
3.    Add the sauces to a bowl and set aside.
4.    Heat a pan with oil for deep or shallow frying or preheat the oven and bake.
5.    Add  1 1/2 tablespoons, each of Corn flour and plain flour, little salt and stir well. Sprinkle some water and mix to coat the fish with flour. The batter should not be runny. Fish has to be coated with a thin layer of batter.
6.    Fry the fish pieces to golden on a medium flame. Drain these on absorbent tissue.
7.    After you finish frying fish, drain the oil from the pan retaining 2 tablespoons oil in the same pan.
8.    Add garlic and fry till it gets fragrant. Add capsicum, layered onions (white parts of spring onions) and fry on high flame for about 3minutes. Onions and capsicums should be crunchy (not over cooked) and not soft.
9.    Stir the sauce mix. When it bubbles add fish. To make a gravy version, pour the corn flour mixture first. Allow it to thicken on a low flame, it gets done quickly. Then add the fish.
10.  Switch off the heat and stir well. For dry recipe, fry on high for 2 to 3 minutes.
11.  Garnish with chopped spring onions.


NOTES :
The colour of your dish can vary depending on your red chili sauce.

If you are using salmon to prepare this dish, you need not use egg since the fish remains moist and soft after frying too. But if you are using any other kind, you could use 1 small egg to lock the juices in the fish so that they remain soft, juicy and moist after frying.
